Cinnamon Toast offers home-baked cakes, biscuits and other sweet treats, made by hand in a family kitchen from natural, unprocessed ingredients. We use unsalted butter, Belgian chocolate, free-range eggs, fresh fruit purées, organic rosewater and lavender, Madagascan vanilla and Ceylon cinnamon. Ingredients such as these are what make baking such a pleasure. We do use food colouring, because without them biscuits and even macaroons would be very dull – but the amounts needed are tiny. We are currently investigating natural colourings as an alternative.
Cinnamon Toast was set up by Jane Middleton from her home in Bath. She edited cookery books for many years but when it got to the stage where she automatically turned to the cake chapter before anything else, she decided it was time to throw in the oven glove and get baking.
Years of scouring other people’s recipes for a living meant that she had picked up a few tips here and there. She also did a general course at Leith’s School of Food and Wine, leaving with a Merit after a gruelling practical exam. (In the cake-decorating class, the tutor told her rather disapprovingly that her cake was ‘very Good Housekeeping‘ – but she has come a long way since then, thank goodness.) As a student in Paris (a long, long time ago), she devoted her time to French pâtisserie rather than French literature. And for fifteen years she did inspections for a national restaurant guide, which enabled her to eat an awful lot of puddings. So it’s fair to say that when it comes to sweet things, she’s shown more dedication than most.
Cinnamon Toast doesn’t offer a mail-order service yet, because, given the delicate nature of our products, we haven’t been able to find packaging that is 100 per cent reliable – a problem we hope to solve eventually. In the meantime, we are happy to deliver in the Bath area for a small charge, or you can collect.
